Ice cream season has officially begun and since it will only get hotter, hereās a refreshing frozen dessert recipe to try. Itās a cantaloupe ice cream with hints of vanilla.
Ingredients:
-450g of fresh cantaloupe (cut up)
-50g of granulated sugar
-473 mL of whipping cream (35% milk fat)
-130g of sweetened condensed milk
-6g of vanilla bean paste
-3 pinches of salt
Steps:
Step 1. Add the cantaloupe to a blender and press the purƩe option.
Step 2. Add the purƩed cantaloupe & granulated sugar to a non stick pan. Mix it well and turn on the heat on maximum. Once it starts to boil, let that cook for 3-4 minutes.
Step 3. Pour the mixture in a bowl and let it cool down.
Step 4.Ā To a large bowl, add the whipping cream, vanilla & condensed milk and whip until soft peaks.
Step 5. Add the cooled cantaloupe purƩe to the whipped cream as well as the salt and mix it well until combined.
Step 6. Pour the mixture into a cake pan or loaf pan. Cover with a plastic film and let it freeze for 5-6 hours.
Step 7. Serve and enjoy! š¦š
*It is important to note that cantaloupe has a high water content so the ice cream will be a bit icy.
