I took these chocolate and pistachio-dipped meringue cookies to an event I hosted, and people were begging to take the extras home with them. The crunchy and slightly chewy meringue is flavored with sweet vanilla and almond extracts. The chocolate coating is the perfect 'cherry on top', if you will, dressing up the already ornate cookie.
These cookies are surprisingly easy to make! As long as you have the right ingredients and tools, you should be destined for perfect drops of meringue cookies. Happy baking (and devouring)!
Ingredients:
For the cookies:
6 large egg whites, room temperature
3/4 teaspoon cream of tartar
1/8 teaspoon salt
1 1/2 cups granulated sugar
1 1/2 teaspoons vanilla extract
1/4 teaspoon almond extract
For the dipping:
1/2 cup dark chocolate
1/2 cup white chocolate
Green food coloring (optional)
1/4 to 1/2 cup finely chopped pistachio crumbles
Directions:
Preheat your oven to 225°F and line a large baking sheet with parchment paper.
In a clean, grease-free bowl, combine the egg whites, cream of tartar, and salt.
Using an electric or stand mixer, beat on low until foamy. Once the mixture has foamed, increase to high speed.
Gradually add sugar, about 1 tablespoon at a time, making sure it is fully dissolved before adding more (it should be about 15 seconds in between each addition).
Continue beating until the mixture is thick, shiny, and forms stiff peaks. Stir in the vanilla and almond extract.
Transfer the meringue to a piping bag fitted with a large tip of your choosing. Pipe cookies onto the prepared baking sheet.
Bake at 225°F (105°C) for 1 hour. After an hour, turn off the oven and let the cookies cool inside for 1-2 hours without opening the door.
Once cooled, remove and place on a wire rack to cool to room temperature.
Melt dark and white chocolate in separate bowls until creamy. If using green extract, mix into the white chocolate once melted.
Carefully dip the side of each meringue cookie into the chocolate and place back on parchment paper. Sprinkle chopped pistachios over chocolate and allow the cookies to fully cool.
Place in an airtight container and enjoy!
