Italian Pistachio Cookies

Multiple sources have told me that these are the "best pistachio cookies they've ever had." Deliciously chewy and full of pistachio flavor, these cookies come together in seconds and are the perfect crowd pleaser.





Ingredients:

  • 1 2/3 cup shelled pistachios

  • 1 cup almond flour

  • 3/4 cup all purpose flour

  • 1 3/4 cup powdered sugar

  • 1/2 tsp almond extract

  • 2 eggs

  • Zest of one lemon

  • Extra powdered sugar, for coating



Directions:

  1. Grind pistachios using a food processor or blender, and whisk ground pistachios with the almond flour and all-purpose flour in a large bowl. 

  2. Add the sugar, eggs, lemon zest, and almond extract and mix until fully combined. 

  3. Spoon dough into pieces about 1/8th of a cup large. Coat in powdered sugar and use hands to brush any large clumps of sugar off, indenting the dough with fingers.

  4. Place cookies on an un-greased baking sheet and bake at 350 degrees for 13-15 minutes. The dough should still be soft. Top with more powdered sugar and serve.
