🍌🍓 shortbread cookies with chocolate 💕

Ingredients:

-162g of cold butter (diced)

-20g of freeze dried strawberries & banana (powdered)

-70g of icing sugar

-252g of all purpose flour

-1 egg

-100g-160g chocolate of choice


Steps:

Step 1: In a large bowl, add the butter, powdered fruits, flour & icing sugar. Use your hands to rub the butter with the dry ingredients. After that, mix using an electrical mixer until the butter is better incorporate with the dry ingredients.

Step 2. Add the egg & using an electrical mixer, mix until it is incorporated with the dough.

Step 3. Keep the dough in the fridge for 5 minutes.

Step 4. Line parchment paper on a baking tray and preheat the oven at 275 degrees Fahrenheit.

Step 5. Flour a pastry board and add half the dough on it. Roll the dough with a rolling pin and use any cookie cutter of your choice. You can keep the other half of the dough in the fridge to use it another day or bake the cookies in two/three batches.

Step 6. Add them to the baking tray and bake until the edges are brown . It took me 15 minutes.

Step 7. Let the cookies cool.

Step 8. the meantime, melt the chocolate using the Bain Marie method or  a microwave using 30 seconds intervals making sure you’re mixing in between.


When it comes to the design, it is really your choice. You can dip half of each cookie in the melted chocolate or spread it on top. Don’t be afraid to be creative!


Step 9. Let it set before eating!! I did put the cookies in the fridge for a few minutes to make the process faster since it is really hot where I live. Enjoy!! ❤️


Notes:

-The dough is on the sticky side therefore it is important to flour your surface or baking board very well!

-Banana has a strong taste so the cookies will mostly taste like banana but you will be able to see specks of strawberry on the cookies. This will depend on how much you blend the freeze dried fruits.

-Your choice of chocolate will depend on how sweet you want your cookies to be. If the baked cookies are sweet enough for you, you can use dark chocolate for decoration.

-If you decide to keep the other half of the dough in the fridge, you can use it as tart dough.
